   THE GASTRONOMY OF THE COSTA BLANCA  
 
 

The Costa Blanca is a territory to which have had different Mediterranean civilizations (Iberians, Phoenicians, Greeks, Romans, Muslims). These villages have left us their customs that with the time have gone being mixed, forming our way of being, and consequently our way of cooking. The gastronomy of the Costa Blanca is inside the Mediterranean diet, which is very healthy as the sanitary authorities affirm constant. The principal food is: the vegetables, the olive oil, the fish, the flour, the rice, the fruits. Thanks to the climatology that is given in this zone we can enjoy a kitchen with so many wealth and variety.

 
 

The most typical plates of the Costa Blanca are: the Valencian paella, the black paella, the " coques " made in oven, " bull with onion ", the sausages, the mixed salad, the rice "caldós", the rice “Al forn”, the rice “a banda”, "l'espencat", and the "mullador". Concerning the desserts. the Costa Blanca possesses Jijona's authentic ice creams, and the genuine ice cream of almonds.
